Yolanda Sanz

Yolanda Sanz holds a Ph.D. in Pharmacy and is a Full Research Professor at the Institute of Agrochemistry and Food Technology of the Spanish National Research Council (IATA-CSIC). She has held fellowships at the University of Groningen (The Netherlands), INRA in Jouy-en-Josas (France), and McMaster University in Hamilton (Canada) during her career. She pioneered research on the role of gut microbiota in celiac disease and, more recently, focused on obesity and stress-related conditions. She is identifying intestinal bacteria that could bring health benefits and diets that may modulate the microbiome and reduce the disease risk. She has been the coordinator of various EU projects (MyNewGut, miVaO, MicroILCs, Climb-Out) and participated in many others (EarlyCause, MicrobiomeSupport, CIRCLES, TRIBIOME) related to human and food systems microbiomes. She is the author of over 200 scientific papers and 13 patents, most licensed and one under exploitation. She has been a Member of the Panel on Dietetic Products, Nutrition and Allergies (NDA) of the European Food Safety Authority (EFSA) (2009-2018) and, currently is a member of the EFSA FEEDAP Panel (2018-2023).
